A Somewhat Healthy Chocolate Chip Cookie

So here I go again, at the beginning of this year I said that I had more motivation to get back into shape because of my diagnosis, but such as life, my mama duties and life got the better of me and I slipped downhill.  I actually gained weight!!  Like what???  How could that be possible???  Well, it was and I gained.  So, instead of feeling bad for myself (like I always do), I turned it around and made it to be my priority….no, my motivation to kick myself in the ass and get it done.

That weekend, I told my husband that whatever fast food or restaurant that we were craving, that we need to eat it that weekend because starting Monday (which yes, it was labor day, but anyways…), we are not eating out or getting fast food for a while.  We pigged out, then came Monday, so we have started working out and making sure we do our portion control.  To my surprise, so far so good.  Even though, yesterday was a bit of a overkill for both me and my husband.  Let me explain…

This week is my daughter’s first week of school.  This is the first time in four years that both she and I will not be spending most of the day with each other.  Yesterday was the day that I wanted to pig out with cookies, ice cream, and Reese’s.  I wanted to be like Beerus from Dragon Ball Super and just have anything and everything that was yummy.  To top it off, I get a text from my husband that there is a box of double stuffed oreo’s in the booth behind him and he is fighting himself to not eat one.

In the end, we did not cave in and I made these somewhat healthy chocolate chip cookies to combat our cravings.  Now, what do I mean by somewhat healthy?  Well, I used my regular cookie recipe, but I substituted my all purpose flour with whole wheat flour.  Let me tell you that it did not make that much difference switching.  I thought it would, but it didn’t.  So, since I have found my white whale, I am wanting to share this news with you all.  Now, with no further ado, here is my recipe:

Somewhat Healthy Chocolate Chip Cookies

Ingredients:

2 sticks of butter at room temperature or 1 stick of butter + 1/4 cup of greek yogurt

1/2 cup white sugar (I used organic white sugar for this recipe)

1 cup brown sugar

1/2 teaspoon vanilla

2 eggs

1 teaspoon baking soda

1 teaspoon salt

2 3/4 cup whole wheat flour plus 1/2 cup all purpose (yes, those are 2 3/4 cups not 2 and 3/4 cup)

12 oz. pack of chocolate chips or dark chocolate chips

 

Directions:

Preheat oven to 350°
1. In a large bowl, cream together butter, white, and brown sugar. Mix in eggs and vanilla.
2. Combine baking soda, salt, and flour in a separate bowl. Stir into wet ingredients. Add flour until mixture isn’t sticking to the sides of the bowl.
3. Fold in chocolate chips.
Bake cookies for 10 minutes.

They will come out of the oven in a very soft form, but let them cool down and they will be good to go to eat.  These cookies are really good and it will tempt you to eat them all, but fight it so you can enjoy them later!
