Hello everyone!  I hope you are having a great Friday!  I know that I didn’t keep my promise last weekend, but it has been a brutal couple of weeks.  I was in the middle of getting stuff done for my school, but my daughter had hand, foot, and mouth disease.  And well, then my husband had it and then I had it.  I basically was in bed for most of the week and the weekend.

Anyway, that is the reason why there was no new post, but I am back at it with writing.  So, I know that some of you have seen or cooked this lasagna that you use ravioli instead of lasagna noodles.  I saw this and was so amazed at how easy lasagna could be.  It is like the busy mom/wife go to dish!  Well, all that I have been seeing is the traditional lasagna with meat sauce, ravioli, cheese, and ricotta.

But then…a thought popped up in my head.  My family and I are very much in love with chicken alfredo, so I thought that I could turn that idea into reality with the same lasagna concept.  So, I got the ingredients, which was 4 ingredients total.  I am not joking….this is really a busy mom’s dream!  All it took was 4 ingredients, an oven, a casserole dish, and 45 minutes!

First, I preheated my oven to 400° and sprayed my casserole dish with cooking spray.  Then, I mixed the sauce.  I added my alfredo sauce to a bowl and added a little salt, pepper, garlic powder, nutmeg, italian seasoning, and parmesan cheese.  Second, I started layering.  I started with pouring some sauce on the bottom, placing the ravioli like you would with lasagna noodles, placing the frozen chicken strips, some cheese and italian seasoning, then some more sauce.  I keep layering until it has reached to the top.  Then, I top it all off with the excess sauce, cheese, and seasoning.  Finally, you bake it with foil on top for 30 minutes, take the foil off, and then bake an additional 15 minutes until the cheese is melted.  So yummy!

Here is the recipe:

Easy Chicken Alfredo Lasagna

Prep Time: 15 minutes

Cook Time: 45 minutes

Total Time: 1 hour

2 jars of alfredo sauce (I used the Bertolli brand, but you can use any brand)

1 bag of frozen grilled chicken breast (or you can cook regular chicken breast…about 1 lb.)

1 bag of frozen cheese ravioli

1 bag of shredded italian cheese (about 2 cups worth) (used half bag when layering and the rest on top)

Ingredients in the sauce:

1 tsp of salt

1 tsp of pepper

1 tbsp of italian seasoning

1 tsp of garlic powder

1 small dash of nutmeg

1 tbsp of grated parmesan cheese

  1. Preheat oven to 400°.  Get a mixing bowl out and pour the 2 jars of alfredo sauce.  Then, add the salt, pepper, italian seasoning, garlic powder, nutmeg, and parmesan cheese to the sauce.  Mix it up.
  2. Spray your casserole dish with cooking spray.  Now, you can start your layering.  The first layer is the sauce.  I poured about 1 cup of sauce at a time.  Then, spread the sauce and start layering the ravioli.  I layered the ravioli like you would lasagna noodles.  Next, spread the chicken strips on top of the ravioli and top the chicken with the shredded italian cheese.  It was about 1/2 cup of cheese.  Then, top it off with some more sauce.
  3. Keep layering the sauce, ravioli, chicken, and cheese until it reaches to the top of the casserole dish.  For me, this was about 2 layers as the frozen chicken strips took up space, but it all depends on the size of your chicken strips and casserole dish.  For the top of the lasagna, add the rest of the sauce and cheese.  I added a little dash of italian seasoning on top, but that is optional.
  4. Finally, place aluminum foil on top of the dish and bake it for 30 minutes.  Once the 30 minutes is up, take the foil off and bake for an additional 15 minutes or until the cheese is melted.  Voila!  Easy Chicken Alfredo Lasagna!  So easy and yummy!

There you have it!  An easy and yummy dish that is both kid and husband approved!  I made this the other day and we are still eating leftovers.  Welp, that is all for this post.  I know I have been sharing a lot of recipes and a lot of food lately, but I couldn’t wait to share this with you all.  I hope you all enjoyed reading!  If you made this, I would love to know how it turned out, so let me know!  As always, I hope you all have a great weekend and I will see you in the next post!
